Ghee

Ghee is amazingly healing substance that is good for all constitutions but especially for vata and pitta. Those with more earth in their body-minds can enjoy modest amounts of ghee. Enjoy for cooking, on bread, in tea, over rice and vegetables. Ghee is really easy to make at home. Best with good quality organic butter. Find the best source you can.

Melt 2-4 sticks in a source pan over medium heat. Once melted let the butter cook over low flame to cook out the water and allow the milk solids to separate. Stay with your ghee as it can burn easily. You will hear popping noises as the water evaporates. When the popping stops and the milk solids drop to the bottom your are almost there. When the ghee turns a golden brown turn off the heat and allow to cool somewhat before pouring through a fine mesh strainer or cheese cloth into a sterilized glass jar.
