Coconut Chia Pudding +/- Chocolate
This recipe is a delicious sweet treat that is a great source of healthy fat and protein. It is deeply satisfying for that sweet or chocolate craving. Pacifying for both vata and pitta.
Ingredients:
13.5 oz coconut milk
1/4 cup maple syrup
3 tablespoons of cocoa or cacao powder (optional)
1/4 cup chia seeds
pinch of pink seat salt
splash of vanilla or orange extract or some lemon, lime, or orange zest really brightens up the flavor
Combine ingredients and blend until smooth. It creates a lovely mousse-like texture. I like to spoon them into 4 oz mason jars and keep in the fridge. Set them out to come to room temp about an hour before serving.
If you’d prefer not to blend - combine ingredients well in a large bowl or mason jar. Stir every 15 minutes or so the first 30-60 minutes to keep the chia from clumping. (I like to make this recipe when I am in the kitchen preparing or cooking other things as it is not much work but requires a baby-sitter the first 30-60 minutes to keep it from clumping.)
